Rebby's Brownies

2 cups sugar
4 eggs
1/4 cup cocoa
1 cup melted butter
2 T. vanilla
1 t. salt
1 1/2 cups flour
1 1/2 cups nuts (optional, but not really cuz nuts are the yummiest!)

Grease 9x13 pan. Bake at 375 for 25 minutes. (I always have to play with the time... Rebby bakes them at 350 for 30? or something.)

Frost when cooled completely.


Frosting
1/2 cup melted butter
2 T. cocoa
3 cups powdered sugar
milk, as needed

Whisk butter and cocoa until smooth.  Add powdered sugar.  Mix well.  Add milk if necessary for consistency.

Quick Peanut Butter Treats

6 c. Krispies
1 c. light corn syrup
1 c. sugar
1 c. peanut butter
1 t. vanilla

For a large batch I use: (I know. The amounts don't equal double)

14 c. cereal
2 c. corn syrup
2 c. sugar
2 c. peanut butter
2 1/2 t. vanilla

Butter 9x13 pan. Combine corn syrup & sugar in saucepan over medium heat. Stir constantly with wooden spoon, til mixture comes to a boil. Boil abt 2 minutes. Remover from heat. Stir in PB & vanilla. Pour over cereal or vice versa & press. Refrigerate. Cut into bars. Skewer & then dip 1 side of bar @ a time in melted chocolatge. Stand on end.

Almond Joy Bars (Andrea Hall)

5 oz Eagle Brand
1 t. vanilla
2 c. confectioners sugar
14 oz. coconut
toasted almonds - crushed. Toast @ 350 for abtr 15 min. stirring every 4 or 5 minutes.

Blend milk & vanilla. Pour xxx a little at a time while blending smooth. Stir in coconut. Refrigerate. Form into balls or bars (~ 1/4 c. of mixture) Skewer then dip into melted chocolate.

Butter Pecan Shortbread

One Recipe (Recipe x 4)

1 1/4 c. flour (5 c.)
1/2 c. (1 stick) butter (2 c. or 4 sticks)
2 T (1/8 c.) chopped nuts (1/2 c.)
1/2 t. vanilla (2 t.)
3 T. brown sugar (3/4) c.

Cut butter into flour mixture. Sprinkle vanilla around in the mixture. Knead Until smooth and roll out 1/2" thick (choose your own thickness & bake accordingly). Cut with a cookie cutter or just cut shapes with a knife.

Bake @325 for 25 - 30 minutes.
