Broccoli Cheese Soup

2 large onions, diced (or minced for you onion haters)
Garlic to taste (3-4 cloves minced)
2-3 crowns Broccoli (save the water you cook it in (or steam it))
½ - 1 whole pkg. mushrooms (sauté with onions after onion is slightly
tender)
3-4 c. Cheese I highly recommend using high quality medium or
sharp cheddar
2 cans cream mushroom soup
Chicken broth (I buy organic, no MSG kind from Fred Myer health
food section
Salt and Pepper to taste
Dash of nutmeg (I don’t usually use this)

Sauté onion and garlic (or use powdered garlic). Cook broccoli, use the water in broth and then add mushrooms

Mostly you get to make it up! I sometimes add diced, cooked chicken breast also.
